Healthy Jalapeno Poppers – It’s Football Season!

I prepared these Jalapeno poppers for football Sunday and they were a huge hit. The level of spice is really dependent on how spicy your Jalapeno’s are. Sometimes I buy some that are very mild and sometimes they are spicy. The Greek Yogurt will tone down the spice level, and if you’re mouth is ever on fire from too much spice drink milk or a spoonful of yogurt :)

6oz ground bison

5 jalapeños

1/2 cup Fage Greek Yogurt (0%)

Parmesan Cheese

1/4 cup feta cheese

1/8 cup green onion and cilantroPre heat oven to 400F.

Slice jalapeños in half and remove the seeds (unless you like it really spicy)

Cook the meat in a skillet using a little garlic powder and onion powder.

Mix greek yogurt, feta cheese, green onions and cooked ground meat in a bowl.

Stuff the hallow jalapeños with the filling. Sprinkle a small amount of cheese on top.

Bake for 20-25 minutes at 400F.

Serve while hot!
